I have a few different points in the Star Wars timeline I'm running Darth Maul in now, so probably a little information would be helpful. I'm not deviating from canon or EU Maul all too much, so it's not super detailed, but it's a jumping off point.
Phantom Menace era Darth Maul is just like he looks in the icons and just like he looks in the movie. I have taken some inspiration from the EU for him since he had very few speaking lines in the movie (thank you, George Lucas, for being infatuated with the wrong character in that movie).
Clone Wars and Rebels era Maul has a cybernetic lower half and is obsessed with revenge against both Obi-Wan Kenobi and Emperor Palpatine. By the time of Solo: A Star Wars Story, he's leading the Crimson Dawn from somewhere on the planet Dathomir.
Post-Rebels Maul is AU, since he does die in canon. Maul's fight with Kenobi leaves him with more cybernetics than ever, but still alive. He goes into hiding, attempting to build up his strength and his power in order to get the revenge he lusts after. After Kenobi dies and Darth Sidious is apparently killed by Darth Vader aboard the second Death Star, Darth Maul turns his attention to ancient secrets of the Sith. He does once again call himself Darth Maul. Though his distraction with ancient secrets means the Crimson Dawn suffers, Darth Maul still runs the organization behind the scenes.
By the time of The Last Jedi, Maul is getting quite old, though his mastery of the Force has allowed him to maintain his vigor. He has very little respect for either the New Order or the Republic, and spends most of his time and energy on the Crimson Dawn or building his own power. Unfortunately, he can feel something familiar stirring in the darkness...
